Vegan Pasta- Zanna Cox Fitness

This creamy avocado pasta is vegan and gluten free; and will leave you feeling light and satisfied, rather than full and feeling like you have over indulged. And the best part of all, its completely guilt free! It is a simple, yet delicious week night meal that you can whip up within 20 minutes for dinner and  is something that the whole family can enjoy.

Please note, we use our Nutri Bullet to whip up the creamy avocado sauce, so if you don’t have a food processor, you can use your Nutri Bullet to blend up the ingredients below!


✕ 12 ounces vegan Berrilla spaghetti
✕ 2 ripe avocados, halved, seeded and peeled
✕ 1/2 cup fresh basil leaves
✕ 1 clove garlic
✕ 2 tablespoons freshly squeezed lemon juice
✕ Kosher salt and freshly ground black pepper, to taste
✕ 1/3 cup olive oil
✕ 1 cup cherry tomatoes, halved


-In a large pot of boiling salted water, cook pasta according to package instructions; drain well.

-To make the avocado sauce, combine avocados, basil, garlic and lemon juice in the bowl of a food processor or nutri bullet; and season with salt and pepper, to taste.

-With the motor running, add olive oil + a small amount of water if needed in a slow stream until emulsified; set aside.

-In a large bowl, combine pasta, avocado sauce + cherry tomatoes.

Serve immediately.
